Ingredients

  • 2 tbsp vegetable oil
  • 2 onions chopped
  • 2 cloves garlic minced
  • 1.5 Kg beef or mutton cubes for stew
  • 5 cups hot water
  • 2 ½ cups dry white beans soaked in warm water overnight with a 1 tsp. of bicarbonate of soda or can of white beans
  • 2 tbsp tomato paste
  • ½ tbsp all spice
  • 1 tsp paprika
  • ¼ tsp dried rosemary
  • ½ tsp cumin
  • 1 tsp sugar optional
  • 1 tsp salt
  • ¼ tsp black pepper

Method:

Instructions
Heat the oil in a cooking pan and fry onions until soft and translucent, then add the minced garlic and cook for 1 minute. Add the meat cubes and continue cooking until the meat changes color.
Add salt, pepper, spices, rosemary, sugar, tomato paste. Add hot water and cook until the meat is tender.
Wash and drain the beans and add to the meat texture. Adjust the seasoning if desired. Stir occasionally with a wooden spoon. Cover and simmer until the beans are cooked.
Serve with white rice.

Notes
Cumin gives a special taste to this dish.
This dish could similarly be made with chicken or sausages.
